A buyer's guide to fish freshness
Clear eyes, firm flesh, clean smell. Five things to check before fish goes in your basket — and how we guarantee them for you.

Freshness is something you can see
Good fish announces itself. Before any catch reaches our fillet station it passes a five-point check, and these are the same signs you can train your own eye to spot.
1. The eyes
Bright, clear, and slightly bulging. Sunken or cloudy eyes mean the fish has been sitting too long.
2. The gills
A healthy red-pink. Brown or grey gills are a hard no.
3. The flesh
Press it — fresh flesh springs straight back. A dent that stays is a fish past its prime.
4. The smell
It should smell of clean sea or river, never sour or sharply "fishy".
5. The scales and skin
Tight, shiny, and intact. Dull, flaking skin tells you it has been handled too much.
What we do before you ever see it
Our rohu, bhetki, pomfret and prawns are sourced daily and kept on flake ice through the entire chain. Cuts are made to order, not in advance, so the flesh you receive has spent its life cold and its journey short.
